Where to find ingredients
You can find fresh shrimp at local fishmongers or the seafood counters of major supermarkets like Naivas or Carrefour. Cassava (mandioca) is readily available in the fresh produce aisles. Annatto (colorau) can be found in the spice section of larger supermarkets or local herb and spice shops. Coconut milk is widely available in the canned goods section.
Preparation method
- Thoroughly clean the shrimp.
- Heat the oil or margarine in a large pot over medium heat.
- Sauté the whole shrimp, keeping the heads on, until they turn vibrant red.
- Remove the shrimp from the pot and set aside to cool.
- Peel the cassava, cut into chunks, and place into a blender.
- Pour the coconut milk into the blender.
- Add the roasted shrimp heads to the blender mixture.
- Take 250g of the previously sautéed shrimp (peeled and de-headed) and add to the blender.
- Add 500ml of water to the blender and pulse until you reach a completely smooth consistency.
- Using the same pot from the shrimp, add the minced garlic and sauté until fragrant.
- Stir in the seasoning powder, annatto powder, salt, and monosodium glutamate if using.
- Sauté the aromatics briefly to release their flavors.
- Pour the blended mixture into the pot with the sautéed spices.
- Stir thoroughly, adding a little extra water if needed to adjust the thickness to your preference.
- Simmer for approximately 15 minutes over low heat, stirring occasionally to prevent sticking.
- Once finished, stir in the brandy, mix well, and remove from the heat immediately.
