Ingredients
150 g black beans
100 g frozen pork loin
150 g salted pork loin
100 g lean dried beef
2 bay leaves
1 medium onion, finely chopped
2 garlic cloves, minced
Fresh chopped parsley and spring onions, to taste
1 tablespoon unsalted light margarine
100 g frozen pork loin
150 g salted pork loin
100 g lean dried beef
2 bay leaves
1 medium onion, finely chopped
2 garlic cloves, minced
Fresh chopped parsley and spring onions, to taste
1 tablespoon unsalted light margarine
Where to find ingredients
Find black beans, onions, garlic, and fresh herbs at local farmers' markets or neighborhood supermarkets. Lean pork loin and dried beef (or corned beef as a possible substitute for the latter) are available at local butcher shops or the meat aisle of larger grocery stores. Use unsalted light butter or a heart-healthy margarine as a substitute for light margarine.
Preparation method
- Soak the black beans in water overnight.
- The next day, soak the salted meats in water, changing the water several times.
- Boil the salted meats in clean water and discard the water.
- Repeat the boiling and discarding process until the salt level of the meats is reduced.
- Boil the meats again in clean water. If the water looks fatty, chill it in the freezer or fridge; the solidified fat on the surface can then be easily removed with a spoon.
- Use this cooking liquid to boil the black beans.
- In a large pot, simmer the black beans together with the desalted meats and bay leaves until both are tender.
- While the beans and meat are simmering, prepare a base sauté in a non-stick frying pan using the light margarine.
- Add the chopped onion and sauté until translucent.
- Add the minced garlic and sauté for another minute.
- Mix the chopped parsley and spring onions into the sautéed base.
- Add this mixture into the pot with the beans and meat.
- Check the seasoning and adjust the salt if necessary.
- Serve the feijoada hot.
Observations
Feijoada is undeniably one of Brazil's most iconic dishes, a rich and deeply savory black bean stew slow-cooked with various meats. This 'light' version adapts the traditional method to be more balanced, utilizing lean cuts and specific preparation techniques that reduce excess fat without compromising the signature taste of the dish.
It is an excellent choice for those wanting to indulge in this classic Brazilian staple in a healthier way, making it perfect for a comforting weekend lunch. The process involves carefully soaking the salted meats and simmering everything together until the ingredients reach a perfectly tender consistency.
