Preparation method
- Cut the saltfish into pieces about 7 cm long
- Wash the fish pieces well under running water to get rid of excess salt
- Put the fish in a bowl and cover with cold water. Keep it in the fridge for at least 12 hours, changing the water at least 3 times while it soaks
- After soaking, drain the fish and wash it again under running water
- Transfer the fish to a pressure cooker and cover with water, making sure not to fill it more than 2/3 full
- Put the lid on the pot and set it to high heat
- Once the cooker starts to whistle, turn the heat down and cook for 30 minutes
- Turn off the heat and wait for all the steam to escape naturally before opening the lid
- Using a slotted spoon, take the cooked fish out of the pot and put it in a serving dish
- While the fish is still warm, shred it using two forks. Pick out any small bits of fat or gristle
- If you prefer, shred the fish in a mixer on low speed until you get the texture you like
- Peel the onions and slice them into half-moons, about 1 cm thick
- Heat a large frying pan over medium heat
- Add the ghee to the hot pan. Toss in the sliced onions and season with a pinch of salt
- Sauté the onions for about 5 minutes, until they soften
- Add the shredded saltfish to the pan with the onions
- Stir and sauté for another 5 minutes. Taste and add more salt if needed
- Serve right away
