Stuffed Picanha with Bacon

Ingredients

1 piece of picanha (approx. 1.3kg)
Juice of 1 large orange
1 tablespoon unsalted butter
150g sliced bacon
1 cup coarse salt

Where to find ingredients

You can find picanha, a prime cut of beef popular in Brazil, at most good butcher shops. Sometimes it's labelled as top sirloin cap. For authentic Brazilian churrasco style, look for thick cuts. Bacon slices and orange juice are readily available at any local supermarket or 'shop'. Unsalted butter and coarse salt are also common grocery items.

Preparation method

  1. Use a sharp knife to create a central opening in the picanha, being careful not to pierce the sides, forming a pocket
  2. Drizzle the entire piece of meat with orange juice, ensuring the liquid also gets into the cavity
  3. Let the meat marinate for 4 hours to absorb the flavor well
  4. Fill the inside of the pocket with the bacon slices and close the opening
  5. Spread the butter all over the surface of the meat
  6. Cover the meat with coarse salt, pressing lightly so it adheres well to the butter layer
  7. Place the picanha on the grill 40 cm from a strong ember bed, keeping the fat side down for 20 minutes
  8. Flip the piece, leaving the fat side facing up
  9. When you notice the meat has puffed up slightly, remove it from the heat
  10. Transfer to a platter, cover with a clean kitchen towel, and let it rest for 10 minutes
  11. Return the meat to the grill, fat side up, for another 5 minutes to reach the ideal doneness
  12. Slice into thin strips, like roast beef, and serve immediately

Observations

This preparation transforms picanha into a sophisticated dish. The secret lies in the citrus marinade that tenderizes the meat and the resting technique, which ensures a juicy result worthy of a high-quality steakhouse.
