Where to find ingredients
Find cauliflower and olive oil at most grocery stores. Tahini, lemon juice, and fresh garlic are also widely available in the produce section of supermarkets. Salt and pepper are common pantry staples.
Preparation method
- Preheat the oven to 220°C
- Prepare the cauliflower: remove the outer leaves and the base of the stalk
- Cut the cauliflower into uniform florets
- Wash the florets under running water and drain them completely in a colander
- Pat the florets dry well with a clean kitchen towel or paper towels to ensure they brown properly
- Arrange the cauliflower florets in a large baking tray
- Drizzle with olive oil
- Season with salt and black pepper to taste
- Toss the florets with your hands so they are evenly coated with the seasoning
- Spread the florets in the tray in a single layer, without overlapping
- Bake for 20 minutes
- Flip the florets halfway through the cooking time so they brown evenly
- While the cauliflower is roasting, prepare the sauce:
- Peel the garlic clove
- In a mortar and pestle, crush the garlic with a pinch of salt until it forms a smooth paste
- Add the tahini and lemon juice to the garlic paste
- Mix well until combined
- Add the filtered water gradually, stirring continuously, until you reach the desired consistency for the sauce (creamy and fluid)
- Adjust salt if necessary
- Serve the cauliflower hot, accompanied by the tahini sauce
Observations
This recipe transforms simple cauliflower into a sophisticated dish. The secret to a perfect result is ensuring the florets are very dry before baking, allowing them to become golden and caramelized.
