Chickpeas with Paprika

Ingredients

1 cup chickpeas
3 cups water (for soaking)
3 cups water (for cooking)
1 bay leaf
1/2 onion
1 garlic clove
1 tsp sweet paprika
1 tbsp olive oil (for sautéing)
Extra virgin olive oil to taste (for finishing)
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

You can find dried chickpeas in the 'pulses and grains' aisle of local markets like Reliance Fresh, Spencer's, or any neighborhood kirana store. Sweet paprika is available in the spice section of supermarkets or specialty spice shops. Use high-quality extra virgin olive oil available in the imported goods or health food aisles.

Preparation method

  1. Place the chickpeas in a large mixing bowl.
  2. Cover with the three cups of water.
  3. Cover and let them soak for eight hours.
  4. Drain the soaking water and transfer the chickpeas to a pressure cooker.
  5. Add the three cups of fresh water and the bay leaf.
  6. Seal the pressure cooker and place it over high heat.
  7. Once the cooker reaches full pressure, lower the heat and cook for 25 minutes.
  8. Turn off the heat and allow the pressure to release naturally before opening the lid.
  9. Finely chop the onion and the garlic clove.
  10. Heat the olive oil in a skillet over medium heat.
  11. Sauté the onion with a pinch of salt for five minutes until golden brown.
  12. Stir in the minced garlic and the paprika, sautéing for another minute.
  13. Add two ladles of the cooked chickpeas along with a little of their cooking liquid to the skillet.
  14. Mash these chickpeas with a spatula until you obtain a coarse purée.
  15. Incorporate this creamy mixture back into the pot with the remaining cooked chickpeas.
  16. Simmer over medium heat, uncovered, for another 10 minutes.
  17. Adjust the seasoning with salt and black pepper to your preference.
  18. Drizzle with a bit of olive oil just before serving.

Observations

This recipe is a brilliant choice for everyday meals, balancing health benefits with sheer simplicity. The secret to achieving a thick, velvety sauce lies in mashing a small portion of the cooked chickpeas, which adds body and creaminess to the final preparation.
