Ingredients
1 kg neck pumpkin
2 garlic cloves
2 tbsp olive oil
1 tsp salt

Where to find ingredients
Buy the pumpkin at the fresh produce section of a local market or neighbourhood greengrocer. Garlic and salt are available in the spice aisle, and olive oil is usually stocked with cooking oils. If Brazilian neck pumpkin is hard to find, use a similar firm, sweet pumpkin as a substitute.
Preparation method
- Peel the pumpkin and cut the flesh into cubes about 2 cm wide
- Finely chop the garlic cloves
- Place a large pan or skillet over medium heat with the olive oil
- Add the garlic and sauté for 1 minute, just until the oil is fragrant, taking care not to let it burn
- Add the pumpkin cubes and the salt to the pan
- Stir occasionally for 10 minutes, until the pumpkin starts to soften
- Cover the pan and lower the heat to the minimum
- Cook for 5 minutes so the pumpkin finishes softening in its own steam
- Remove the lid and keep stirring while mashing the pieces with the back of a wooden spoon, until it reaches the texture you prefer
- Turn off the heat and serve immediately
