Olive oil to taste
Salt to taste
Juice of 1/2 lemon
1/2 teaspoon coriander seeds
Olive oil to taste
Salt to taste
Where to find ingredients
You can find fresh zucchini and lemons in the produce section of local supermarkets or 'sabzi mandis' (vegetable markets). Coriander seeds are available in the dry spice section of any local grocery store or kirana shop. Use extra virgin olive oil for the best flavor profile.
Preparation method
- Scrub the zucchini skin thoroughly under running water using a vegetable brush.
- Pat dry with a clean kitchen towel.
- Trim off and discard both ends.
- Slice the zucchini crosswise to separate the thicker end from the thinner one.
- Cut the thicker section in half lengthwise and slice each half into three strips to create batons.
- Divide the thin part in half crosswise so all pieces have a similar size.
- Cut each of these pieces into four parts.
- Heat a non-stick frying pan over medium heat.
- Add a drizzle of olive oil and arrange the zucchini pieces with the cut side facing down.
- Grill for about 2 minutes until they are golden brown.
- Lightly crush the coriander seeds in a mortar and pestle to release their aroma.
- Turn the batons over using kitchen tongs to sear the opposite side.
- Add the crushed coriander seeds, season with salt, and add a little more olive oil.
- Sauté for another minute until the zucchini is tender and well-seasoned.
- Finish by turning off the heat and stirring in the lemon juice.
- Serve immediately.
