Pan-Seared Steak with Onions (Bife acebolado)

Ingredients

2 strip steaks, rump steaks or top round steaks
1 onion
2 tablespoons water
2 teaspoons white wine vinegar
1 teaspoon butter
Olive oil, as needed
Salt, as needed
Freshly ground black pepper, as needed

Where to find ingredients

Look for the beef at the butcher counter or meat section, and buy the onion, vinegar, butter, oil, salt, and black pepper at any supermarket or neighbourhood grocer. If needed, a mild white vinegar can be used as a substitute for white wine vinegar.

Preparation method

  1. Leave the steaks out of the fridge for 10 minutes so they lose some of their chill before you start cooking.
  2. In a small bowl, mix the water with the vinegar.
  3. Peel the onion and slice it into half-moons about 0.5 cm thick.
  4. Heat a large frying pan over medium heat.
  5. Season the steaks with salt and black pepper.
  6. Add 1 teaspoon of olive oil to the very hot frying pan.
  7. Lay the steaks side by side in the pan.
  8. Grill for 2 minutes until browned and they release from the surface.
  9. Turn the steaks over with tongs.
  10. Grill the other side for another 2 minutes.
  11. Remove the meat from the frying pan and set aside on a plate.
  12. Keep the frying pan over medium heat and add another 1 teaspoon of olive oil.
  13. Sauté the onions with a pinch of salt for 2 minutes until they begin to brown.
  14. Pour the water and vinegar mixture into the frying pan.
  15. Cook for 3 minutes, stirring occasionally, to loosen the bottom of the pan and soften the onion.
  16. Turn off the heat.
  17. Add the butter and shake the frying pan until it melts and emulsifies the sauce.
  18. Serve the steaks topped with the onion and the pan sauce.
