Where to find ingredients
Black beans are a kitchen staple; look for them in the dry goods aisle of any local supermarket or market, usually sold in bags. For the beef, any lean cut from your local butcher works well when diced small. Fresh produce like onions, garlic, bell peppers, and cabbage are easily found at any open-air market or grocery section. Bacon and eggs are readily available at any local shop. Dried oregano, black pepper, and vinegar are standard pantry items you'll find in any supermarket, while liquid sweetener is located in the baking or tea-and-coffee aisle.
Preparation method
- In a heavy-bottomed pot, fry the diced beef with the garlic, onion, and bacon until everything is nice and golden
- Toss in the chopped bell pepper and give it a quick stir-fry for about a minute
- Add the cooked beans, shredded cabbage, enough water to just cover the ingredients, salt, black pepper, oregano, vinegar, and the sweetener
- Let it simmer over medium heat until the cabbage has softened up nicely
- While the salad is still bubbling away, crack the egg straight into the pot
- Whisk it vigorously with a fork or a small whisk until the egg is fully cooked and creates a slightly thickened, velvety sauce
- Give it a quick taste and adjust the seasoning if you need to
- Serve it warm and enjoy
