2 cups yellow flaked cornmeal
75g butter, cubed

Preparation method
- Trim the ends of the plantains and peel them
- Cut each plantain in half lengthwise
- Cut each half in half again lengthwise
- If the strips are too thick, cut them into three parts
- Slice each piece of plantain into roughly 1 cm cubes
- Heat a large non-stick frying pan over medium heat
- Add the oil to the pan
- Add the cubed plantains to the pan and season with a pinch of salt
- Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelised; cooking time may vary depending on the ripeness of the plantains
- Lower the heat
- Add the butter cubes to the pan and stir until completely melted
- Season with 1 teaspoon of salt and black pepper to taste
- Add the cornmeal gradually, stirring continuously with a spatula to combine well
- Cook for another 4 minutes, stirring constantly, until the farofa is crispy and golden brown
- Turn off the heat and serve the farofa immediately
