Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and cook them in a pot with the 2.5 litres of cold water and the beef bouillon cubes.
- Cover the pot and simmer over low heat for approximately 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate large pot.
- Sauté the paio sausage, grated onion, and crushed garlic in the oil until golden.
- Add the rinsed and drained rice and the chopped coriander to the sautéed mixture, stirring well for a few minutes.
- Combine the cooked beans with their cooking broth into the rice mixture.
- Stir everything together, cover the pot, and cook over low heat until the rice is tender and the mixture is moist and creamy.
- Arrange the slices of queijo coalho evenly over the top of the rice.
- Cover the pot again and let the steam melt the cheese for a few minutes.
- Serve the Baião de Dois warm, accompanied by fried or roasted carne-de-sol if desired.
