Where to find ingredients
You can find rice, fresh carrots, onions, and pantry staples like olive oil, salt, and bay leaves at local markets, grocers, or supermarkets in the produce and dry goods aisles.
Preparation method
- Wash and peel the carrot
- Grate the carrot using the fine side of a grater
- Finely dice the onion
- Pour a little more than 3 cups of water into a kettle and heat over low flame until boiling
- Heat a medium saucepan over low heat
- Add the olive oil
- Add the diced onion and grated carrot to the pan
- Season with salt
- Sauté the vegetables for 2 minutes until they soften
- Add the rice and the bay leaf to the pan
- Stir well so that all the grains are coated in the olive oil
- Measure exactly 3 cups of the boiling water and pour over the rice
- Give it one last stir and increase the heat to medium
- Avoid stirring the rice from this point on
- Wait until the water level drops to the surface of the grains
- Reduce the heat to the lowest setting
- Partially cover the pan with a lid
- Cook until all the water has been absorbed
- Check the doneness by inserting a fork to the bottom of the pan
- Turn off the heat
- Keep the pan covered for another 5 minutes to let the steam finish the cooking process
- Gently fluff the grains with a fork
- Toss the carrots lightly to combine
- Transfer to a serving bowl and serve immediately
Observations
This dish is a fantastic way to add color and nutrients to your daily meals. The secret to achieving perfectly fluffy grains lies in sautéing the rice well before adding the boiling water.
