500g fresh green beans (feijão verde)
2 beef stock cubes
3 tbsp vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tbsp fresh coriander, chopped
2 1/2 cups long-grain white rice
150g queijo coalho, thinly sliced
Where to find ingredients
You can find fresh green beans and standard pantry items at any local supermarket. For the authentic Brazilian ingredients, seek out specialist South American grocers or online international food stores. Substitute the paio with a high-quality smoked sausage like chorizo if you cannot source it, and replace the queijo coalho with halloumi if necessary, as it offers a similar texture and saltiness when melted.
Preparation method
- Soak the green beans in cold water overnight.
- The next day, drain the beans and place them in a pot with the 2.5 litres of fresh water and the beef stock cubes.
- Cover the pot and simmer over a low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the vegetable oil in a separate large pan.
- Add the sliced paio, grated onion, and crushed garlic to the pan and sauté until golden.
- Add the washed and drained rice and the chopped coriander to the pan, stirring well for a few minutes to coat the grains.
- Pour the cooked beans and their cooking liquid into the pan with the rice.
- Mix well, cover the pan, and simmer on a low heat until the rice is cooked through and the mixture remains moist.
- Arrange the slices of queijo coalho evenly over the top of the rice.
- Cover the pan again and let it rest for a few minutes to allow the steam to melt the cheese.
- Serve the Baião de Dois hot, traditionally accompanied by fried or roasted carne-de-sol if desired.
Observations
Baião de Dois is an iconic dish from Brazilian cuisine, deeply rooted in the traditions of the Northeast and North regions. It is a hearty, comforting combination of rice and beans, elevated by the addition of savoury paio sausage, firm queijo coalho, and fragrant herbs. Whilst the preparation is straightforward, it delivers a deeply satisfying meal that works just as well for a casual weeknight dinner as it does for a special weekend lunch.
