Fluffy White Rice (Arroz branco soltinho)

Where to find ingredients
Buy the ingredients in the rice aisle, the fresh herbs and vegetables section, and the cooking oils shelf of any supermarket or greengrocer. If needed, a bay leaf can be substituted with a similar dried herb, but the bay leaf is ideal.
Preparation method
- Finely dice the onion
- Bring the water to the boil
- Heat a medium saucepan over a low heat
- Add the olive oil and onion
- Add a pinch of salt
- Sauté the onion for 2 minutes until softened
- Stir the bay leaf into the sautéed onion
- Add the rice and stir for 1 minute so the grains are coated in the oil
- Pour the boiling water over the rice
- Season with the remaining salt and mix gently
- Increase the heat to medium
- Do not stir the rice from this point on
- Wait until the water reaches the level of the grains
- Reduce the heat and partially cover the pan
- Cook until all the water has been absorbed
- Check the rice by inserting a fork and gently moving the grains apart at the bottom of the pan
- Leave it on the heat for a few more moments if there is still any moisture
- Turn off the heat and keep the pan covered for 5 minutes so the steam finishes cooking it
- Gently fluff the grains with a fork before serving
