For the best results, use a standard long-grain rice (like Basmati or classic long-grain), and fresh, firm carrots from the vegetable aisle.
Preparation method
- Wash and peel the carrot
- Finely grate the carrot using the smallest holes of your grater
- Dice the onion into small, uniform pieces
- Boil a little over 3 cups of water in a kettle over low heat
- Warm a medium saucepan over a low hob setting
- Add the olive oil to the pan
- Toss in the diced onion and grated carrot
- Season with the salt
- Sauté the vegetables for 2 minutes until they soften slightly
- Add the rice and the bay leaf to the pan
- Stir everything thoroughly so the grains are well-coated in the oil
- Measure exactly 3 cups of the boiling water and pour over the rice
- Give it one final stir and increase the heat to medium
- Avoid stirring the rice from this point onwards
- Wait until the water has reduced to the level of the grains
- Turn the heat down to the lowest setting
- Cover the pan with a lid, leaving it slightly ajar
- Continue to cook until all the water has been absorbed
- Check if it is cooked through by inserting a fork right to the bottom of the pan
- Turn off the heat
- Leave the pan covered for another 5 minutes, allowing the residual steam to finish the cooking process
- Fluff the rice gently using a fork
- Fold in the grated carrot delicately
- Transfer to a serving bowl and enjoy straight away
