Ingredients
1 cup long-grain white rice
2 cups water
1 tablespoon olive oil
1/2 onion, finely chopped
1 bay leaf
1/2 teaspoon salt
zest of 1 lime
2 cups water
1 tablespoon olive oil
1/2 onion, finely chopped
1 bay leaf
1/2 teaspoon salt
zest of 1 lime
Where to find ingredients
Rice: Use standard long-grain white rice found in the grains aisle of any major UK supermarket. Onions, salt, and olive oil are pantry staples available everywhere. Lime: Look for standard green limes in the produce section of any supermarket. The zest is the outer green skin; ensure you only grate the green part and avoid the bitter white pith. Bay leaves: Found in the herbs and spices aisle, either dried in jars or fresh in the produce section.
Preparation method
- Peel the onion and chop it into very small pieces
- Pour the water into a kettle and bring it to a boil over a low heat
- Heat a medium saucepan over a low heat
- Add the olive oil and the chopped onion
- Season with a pinch of salt
- Sauté for about 2 minutes until the onion has softened
- Add the bay leaf and the rice to the pan
- Stir for approximately 1 minute so the grains are coated in the oil, which ensures a lovely, fluffy result
- Measure 2 cups of the boiling water and pour it over the rice
- Season with the remaining salt and give it a quick stir
- Increase the heat to medium
- Avoid stirring from this point onwards
- Wait for the water to evaporate until it reaches the level of the rice grains
- Reduce the heat to low and partially cover the pan with a lid
- Cook until all the water has been absorbed
- Check the bottom of the pan with a fork to ensure the water has fully evaporated
- Turn off the heat
- Add the lime zest
- Cover the pan completely with the lid
- Let the rice steam and rest for 5 minutes
- Use a fork to fluff the grains and incorporate the zest
- Transfer to a serving bowl and serve immediately
