Where to find ingredients
You can find fresh shrimp and cassava in the produce or seafood sections of local markets. Coconut milk, annatto, and seasoning packets are typically available in the dry goods or canned food aisles.
Preparation method
- Thoroughly wash the shrimp.
- Heat the oil or margarine in a large pot over medium heat.
- Sauté the whole shrimp, including the heads, in the hot fat until they turn bright red.
- Remove the shrimp from the pot and set aside on a plate to cool.
- Peel the cassava, cut into smaller pieces, and place them into a blender.
- Pour the coconut milk into the blender.
- Add the roasted shrimp heads to the blender mixture.
- Separate 250 g of the cooked shrimp (peeled and deveined) and add them to the blender.
- Add 500 ml of water to the blender and pulse until you have a smooth, homogeneous mixture.
- In the same pot used to sauté the shrimp, add the minced garlic and fry until golden.
- Add the seasoning powder, annatto, salt, and monosodium glutamate if using.
- Sauté these seasonings for a few moments to release their aroma.
- Pour the blended mixture into the pot with the sautéed seasonings.
- Stir well and add a little extra water if needed to reach your desired consistency, making sure it is not too thick.
- Simmer for about 15 minutes over low heat, stirring occasionally.
- Once finished cooking, stir in the brandy, mix thoroughly, and remove from heat.
