1 garlic clove
1 can (14.5 oz) diced tomatoes, including the liquid
2/3 cup water
1 tablespoon olive oil

Sea salt and freshly ground black pepper to taste
Where to find ingredients
You can find fresh okra in the produce section of well-stocked local supermarkets or specialty produce markets. Canned tomatoes, olive oil, and seasonings are pantry essentials available at any standard grocery store.
Preparation method
- Wash the okra pods thoroughly and pat them dry with a clean kitchen towel
- Trim the stems and slice each pod on a slight diagonal into 1cm rounds
- Set the sliced okra aside for now
- Finely dice the red onion and mince the garlic clove
- Halve the bell pepper, discard the seeds, and dice half of it into 1cm squares
- Gently crush the cumin seeds using a mortar and pestle to draw out their essential oils
- Place a medium-sized pan over medium heat and warm the olive oil
- Add the diced onion and bell pepper to the pan
- Season lightly with a pinch of salt and sauté for about 3 minutes until softened
- Stir in the minced garlic and crushed cumin
- Sauté for 1 minute until the aromatics are fragrant
- Deglaze the pan with the water, scraping up all the flavor from the bottom
- Mix in the canned diced tomatoes along with their juices
- Season with 1 teaspoon of salt and black pepper to your preference
- Bring the sauce to a gentle simmer over medium heat
- Lower the heat and cook for 5 minutes, stirring occasionally, until the sauce reduces and thickens
- Gently fold the sliced okra into the simmering sauce
- Cook for another 6 minutes, stirring intermittently, until the okra is just tender
- Be mindful not to overcook, ensuring the okra retains its ideal, slightly firm bite
- Serve immediately while warm
