Calabresa Coxinha (Coxinha de calabresa)

Ingredients

1 cup water
2 cups milk
2 bouillon cubes (bacon or rib flavor)
200g skinless ground calabresa sausage
1/2 cup cooked and mashed potatoes
1 tablespoon butter
2 1/2 cups all-purpose flour
Margarine for greasing
20 pitted green olives
Breadcrumbs for breading
1 beaten egg
Oil for deep-frying

Where to find ingredients

Find calabresa sausage in the cured meat section of local grocers; substitute with linguica or a mild smoked chorizo if necessary. Bouillon cubes and all-purpose flour are available in the pantry aisles of standard supermarkets.

Preparation method

  1. Combine the water, milk, bouillon cubes, ground calabresa, mashed potato, and butter in a large pot.
  2. Place the pot over heat and bring the mixture to a boil.
  3. Add all the flour at once.
  4. Stir vigorously until the dough pulls away completely from the bottom of the pot.
  5. Transfer the dough to a smooth surface that has been lightly greased.
  6. Knead the dough carefully and allow it to cool down.
  7. Divide the dough into small portions and flatten them with your hands.
  8. Place an olive in the center of each portion.
  9. Shape the dough into the traditional teardrop shape characteristic of a coxinha.
  10. Dip each unit into the beaten egg.
  11. Coat the coxinhas thoroughly in the breadcrumbs.
  12. Deep-fry in hot oil until they reach a golden-brown color.
  13. Drain on paper towels to remove excess oil before serving.
