500 g of fresh green beans
2 beef stock cubes
3 tablespoons of vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon of fresh coriander, chopped
2 1/2 cups of long-grain white rice
150 g of queijo coalho, thinly sliced
500 g of fresh green beans
2 beef stock cubes
3 tablespoons of vegetable oil
1 paio sausage, sliced
1 onion, grated
1 garlic clove, crushed
1/2 tablespoon of fresh coriander, chopped
2 1/2 cups of long-grain white rice
150 g of queijo coalho, thinly sliced
Where to find ingredients
You can find fresh beans and long-grain rice at local supermarkets or municipal markets in Gaborone. For authentic ingredients like paio sausage and queijo coalho, check specialty butcher shops or import delis; if unavailable, use a firm, smoked pork sausage as a substitute for paio and a firm, non-melting grilling cheese such as halloumi as a substitute for queijo coalho.
Preparation method
- Soak the green beans in water overnight.
- The next day, drain the beans and place them in a pot with the 2.5 litres of cold water and the beef stock cubes.
- Cover the pot and simmer over low heat for about 1 hour, or until the beans are tender.
- While the beans are cooking, heat the oil in a separate large pot.
- Sauté the sliced paio, grated onion, and crushed garlic in the oil until golden.
- Add the rinsed, drained rice and chopped coriander to the pot, sautéing for a few minutes to toast the grains.
- Pour the cooked beans along with their cooking broth into the rice mixture.
- Stir everything well, cover the pot, and cook on low heat until the rice is tender and the mixture is moist and creamy.
- Arrange the slices of queijo coalho over the top of the rice.
- Cover the pot again and let the steam melt the cheese for a few minutes.
- Serve the Baião de Dois hot, ideally with fried or roasted carne-de-sol on the side.
