Where to find ingredients
You can find black beans, carne-seca, linguiça calabresa, and paio at specialized Latin American food shops or well-stocked butcher counters. If unavailable, high-quality smoked sausages or salt-cured beef cuts can be used as substitutes for the traditional Brazilian ingredients.
Preparation method
- Sort the black beans, rinse them thoroughly under cold water, and soak them until the next day
- Soak the salted meats in cold water for 24 hours, changing the water multiple times to remove excess salt
- On the day of cooking, boil the salted meats in water to eliminate remaining salt
- In a large pot, lightly sear the fresh and pre-boiled salted meats in a little olive oil
- Place the beans, carne-seca, and tougher meat cuts into a pressure cooker with water
- Cook over medium heat until the ingredients begin to soften
- Cook the more tender meat cuts separately to ensure they do not fall apart
- Sauté the minced garlic in a separate skillet with a little oil or olive oil
- Transfer the beans and all the prepared meats into a large, spacious pot
- Taste for salt carefully, remembering that the cured meats already season the stew
- Fry the bacon, linguiça calabresa, and onions, then add them to the main stew along with the garlic mixture
- Let the feijoada simmer over low heat for 15 to 20 minutes to thicken the broth
- Add oranges cut into quarters into the pot, if desired, to help with flavor and salt balance
Observations
Feijoada stands as the most iconic dish in Brazilian cuisine. This version features a variety of pork and beef cuts, which combine to create a deeply flavorful, robust broth. The key lies in the patient preparation of the meats and a carefully seasoned base. Always serve it alongside white rice, sautéed collard greens, and orange slices to balance the richness of the stew.
