1 tbsp vegetable oil
1 garlic clove, crushed
Salt and black pepper, to taste
1 cup chopped palmito
6 tbsp Arborio or Carnaroli rice
200g shrimp, peeled, cleaned, fresh or frozen

Where to find ingredients
You can find fresh shrimp and local produce at neighborhood markets or supermarkets in Nassau and across the islands. Palmito (hearts of palm) is commonly found in the canned vegetable aisle of major grocery stores. If fresh herbs are unavailable, dried parsley can be used as a substitute, though fresh is recommended for the best flavor.
Preparation method
- Heat the oil in a large pan and sauté the onion until translucent.
- Add the garlic and sauté for another 30 seconds.
- Add the shrimp to the pan and cook until pink and firm, about 3 to 4 minutes.
- Remove the shrimp from the pan and set aside.
- In the same pan, add the rice and toast it for 1 minute, stirring constantly.
- Pour in a ladle of hot broth or water and cook, stirring continuously until the liquid is almost fully absorbed.
- Continue this process, adding liquid a ladle at a time, until the rice is al dente and creamy.
- During the final few minutes of cooking, fold in the tomato, palmito, peas, and the reserved shrimp.
- Mix well to combine, season with salt and pepper to taste, and finish with a sprinkle of fresh parsley.
- Serve immediately while hot, garnished with extra parsley if desired.
Observations
Shrimp risotto is a classic dish that perfectly balances the velvet texture of arborio rice with the delicate, savory notes of fresh shrimp. This version is designed for those who appreciate a practical approach to fine dining, using everyday ingredients and straightforward techniques. The preparation involves gently cooking the rice until it reaches that perfect al dente bite, while building a savory base with aromatic seasonings. Finishing with tender hearts of palm and peas creates a beautiful contrast in both texture and flavor. It is a fantastic choice for a special lunch or an intimate dinner, offering a comforting and elegant result that is surprisingly simple to master.
