Brazilian carrot rice (arroz com cenoura)

Ingredients

1 1/2 cups white long-grain rice
1 carrot
1/2 onion
3 cups water
1 1/2 tablespoons olive oil
1 bay leaf
1 teaspoon salt

Where to find ingredients

You can find most of these staples at any local Bahamian food store or supermarket. Long-grain white rice is standard in the grains aisle. For fresh produce like carrots and onions, check the vegetable section. The bay leaf can typically be found in the dry spices and herbs aisle near the other aromatics. If you're looking for high-quality olive oil, look in the international or baking oils section of your local grocery store.

Preparation method

  1. Wash and peel the carrot
  2. Grate the carrot using the fine side of your grater
  3. Finely dice the onion
  4. Pour a little more than 3 cups of water into a kettle and bring to a simmer over low heat
  5. Warm a medium-sized pot over low heat
  6. Add the olive oil
  7. Add the diced onion and grated carrot to the pot
  8. Season with the salt
  9. Sauté the vegetables for about 2 minutes until they soften slightly
  10. Add the rice and the bay leaf to the pot
  11. Stir well so every grain of rice is coated in the oil
  12. Measure exactly 3 cups of the boiling water and pour it over the rice mixture
  13. Give it one last stir, then turn the heat up to medium
  14. Avoid stirring the rice from this point on
  15. Once the water level has reduced until it is level with the rice grains,
  16. lower the heat to the absolute minimum setting
  17. Place the lid on the pot, leaving it slightly ajar
  18. Cook until all the water has been absorbed
  19. Check if it is done by carefully poking a fork to the bottom of the pot
  20. Turn off the heat
  21. Keep the pot covered for another 5 minutes, allowing the trapped steam to finish cooking the rice
  22. Fluff the rice gently with a fork
  23. Fold in the carrots delicately
  24. Transfer to a serving bowl and serve immediately

Observations

This simple dish is a fantastic way to brighten up your plate with a pop of color and extra nutrients. The secret to getting that perfect, fluffy, non-sticky rice lies in properly sautéing the grains in a bit of oil before adding the boiling water.
