Where to find ingredients
You'll find papayas readily available in the fruit section of most Australian supermarkets and fruit markets. Look for ripe, fragrant ones. Preparation method
- Halve the papayas and scoop out all the seeds
- Scoop the flesh from one papaya and blend until you have a smooth puree
- Finely dice the flesh from the second papaya and set aside
- Whip the pure cream with the caster sugar in an electric mixer until stiff peaks form
- Gently fold the papaya puree into the whipped cream, being careful not to deflate it
- Stir in the diced papaya pieces, incorporating them gently
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmould, briefly dip the bottom of the container in warm water
- Cut the frozen ice cream into cubes, serve in bowls, and finish by sprinkling the chopped cashews on top
- If you like, add a few drops of lemon juice over the bowls for a citrusy zing
