6 tablespoons cold water
1 can (395g) sweetened condensed milk
395ml milk (use the empty condensed milk tin as a measure)
2 tubs (approx. 340g) natural yoghurt
6 medium red guavas
1/2 cup caster sugar
1 1/2 cups water (for the coulis)

Where to find ingredients
You can find red guavas at independent greengrocers or specialty Asian and Latin American grocers. For the remaining ingredients, standard items like sweetened condensed milk and natural yoghurt are readily available in the baking and dairy aisles of major Australian supermarket chains. If fresh red guavas are out of season, high-quality guava paste or pulp can be sourced from specialty shops as a substitute.
Preparation method
- Bloom the gelatine powder in the 6 tablespoons of cold water.
- Dissolve the bloomed gelatine completely using a bain-marie.
- In a blender, process the condensed milk, milk, natural yoghurt, and the dissolved gelatine until smooth.
- Pour the mixture into a ring mould lightly rinsed with water.
- Refrigerate for approximately 4 hours, or until the flan is well set.
- While the flan sets, prepare the coulis by peeling the guavas and cutting them into cubes.
- Place the guava cubes into a saucepan with the sugar and 1 1/2 cups of water.
- Simmer over low heat for about 20 minutes, or until the guavas are tender and beginning to break down.
- Remove from the heat and blend the mixture until you have a smooth purée.
- Return the purée to the pan and cook over low heat for another 15 minutes, stirring occasionally, until the sauce thickens.
- If the sauce becomes too thick during cooking, add the remaining 1/2 cup of water to reach your desired consistency.
- Allow the guava coulis to cool completely before pouring it over the chilled flan.
