8 tablespoons vegetable oil (divided for dough and boiling water)
1 large egg
1 tablespoon fresh parsley, finely chopped
1 tablespoon fresh coriander, finely chopped
1/2 tablespoon spring onions, finely sliced
1 1/2 cups all-purpose wheat flour
Salt to taste
Water as needed for boiling rice

Where to find ingredients
Find standard white rice, wheat flour, and eggs at any major supermarket or local grocery store in Zimbabwe. Fresh herbs like coriander, parsley, and spring onions are readily available at fresh produce markets, greengrocers, or the vegetable section of your preferred supermarket. If you cannot find fresh coriander, look for it in the herb section of larger, well-stocked supermarkets; there is no perfect substitute for its distinct flavour, so avoid using dried versions if possible.
Preparation method
- Boil the rice in salted water until it becomes very tender
- Drain any excess water thoroughly
- In a blender, blitz the cooked rice, egg, parsley, coriander, and spring onions until you reach a smooth consistency
- Transfer the mixture to a saucepan
- Gradually fold in the wheat flour, stirring constantly
- Cook over low heat, stirring continuously, until the dough pulls away from the sides and forms a single ball
- Season with salt as you prefer
- Remove the dough from the heat and allow it to cool slightly
- Turn the dough onto a clean, lightly floured surface and roll it into a cylinder about 2 cm thick
- Cut the cylinder into individual pieces approximately 2 cm wide
- In a large pot, bring plenty of salted water to a boil with 4 tablespoons of vegetable oil
- Drop the gnocchi into the boiling water in small batches to ensure they don't stick
- Remove the gnocchi from the water as soon as they float to the surface, signalling they are cooked through
- Drain well and, if you like, briefly pan-fry them in a frying pan with the remaining vegetable oil, or serve immediately with your favourite sauce
Observations
Rice gnocchi is a creative variation of traditional Italian pasta, adapted to highlight local flavours and using rice as the key ingredient. This homemade dish is an excellent alternative for anyone looking to try something different, savoury, and relatively straightforward to assemble. By combining cooked rice with eggs, fresh herbs, and wheat flour, you create soft, pillowy gnocchi that pair beautifully with any sauce of your choice.
