Fresh corn on the cob with husks can typically be found at local farmers' markets or the produce section of grocery stores during peak summer season. Grated coconut is available in the baking or international foods aisle of most supermarkets.
Preparation
- Carefully remove the husks from the corn and set them aside to use as wrappers
- Grate the corn kernels or cut them close to the cob
- Process the kernels in a blender with the water
- Transfer the mixture to a bowl
- Add the grated coconut, sugar, and salt
- Stir everything very well
- Place a portion of the corn mixture into the center of the corn husks
- Fold the husks carefully and tie them tightly with kitchen twine or thin strips of husk to seal
- Bring a large pot of water to a rolling boil
- Add the corn packets one by one to the boiling water
- Ensure the water remains at a rolling boil when adding the packets to prevent them from falling apart
- Cook for approximately 40 minutes
- Remove the packets carefully with a slotted spoon
- Allow them to cool in a cool, ventilated place before serving
Notes
Serve warm with a fresh cup of coffee.
