Ingredients
4 cups grated cassava (aipim)
3 cups sugar
200 g margarine
1 small packet grated parmesan cheese
4 eggs
1 pinch salt
3 cups sugar
200 g margarine
1 small packet grated parmesan cheese
4 eggs
1 pinch salt
Where to find ingredients
In Zambia, cassava is widely available in local markets and supermarkets, while sugar, margarine, eggs and salt are common grocery items. Parmesan cheese is more likely to be found in larger supermarkets; use it as the original ingredient for the intended sweet-salty balance.
Preparation method
- Start by beating the margarine, sugar and egg yolks until you get a smooth cream
- Add the grated cassava, parmesan cheese and pinch of salt, mixing everything very well
- Beat the egg whites separately until stiff and gently fold them into the batter to make the cake lighter
- Pour the mixture into a previously greased tin
- Bake until it is golden and firm, about 45 minutes
Observations
This recipe is ideal with fresh coffee. The secret is the combination of creamy grated cassava and the salty touch of parmesan cheese, giving a balanced sweet that is very practical to make.
