Where to find ingredients
Find standard pantry items like rice, flour, eggs, and salt at any local supermarket. For the fresh herbs, check the produce section; in Western Samoa, parsley and spring onions (scallions) are common, while coriander (cilantro) can be found in the fresh herb aisle or at local markets. Vegetable oil is widely available in the oil and fats aisle of any neighbourhood grocery store.
Preparation method
- Cook the rice in salted water until very tender
- Drain any excess water well
- In a blender, blitz the cooked rice with the egg, parsley, coriander, and spring onions until you have a smooth mixture
- Transfer the mixture into a saucepan
- Gradually stir in the flour until well combined
- Cook the dough over low heat, stirring constantly, until it pulls away completely from the bottom of the pan and forms a cohesive ball
- Season with salt to taste
- Take the dough off the heat and let it cool down slightly
- On a clean, lightly floured work surface, roll the dough into a log about 2 cm thick
- Cut the log into small 2 cm pieces to form your gnocchi
- In a large pot, bring plenty of water to a boil with salt and about 4 tablespoons of the vegetable oil
- Drop the gnocchi into the boiling water in small batches so they don't stick together
- Remove the gnocchi from the water as soon as they float to the surface, which means they are cooked through
- Drain the cooked gnocchi and, if you like, sear them in a frying pan with the remaining vegetable oil, or simply serve tossed in your favourite sauce
Observations
Rice gnocchi is a creative, comforting twist on the classic Italian pasta, adapted to Brazilian tastes using cooked rice as the base. This homemade recipe is a fantastic choice if you're after something a bit different, flavoursome, and fairly straightforward to whip up. By blending cooked rice with egg, fresh herbs, and a bit of flour, you get soft, pillowy gnocchi that pair beautifully with your favourite pasta sauce.
