Ingredients
6 ears of fresh corn
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese
Where to find ingredients
Fresh corn can be found at local produce markets or farmers' markets. For the remaining items, grocery stores provide all necessary supplies. If Parmesan is unavailable, a sharp aged Pecorino can be used as a substitute.
Preparation method
- Wash the corn cobs thoroughly and remove all silks
- Cut the kernels off the cobs with a knife and set aside in a bowl
- Place the corn kernels and milk into a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the fiber
- Transfer the liquid to a saucepan and place over low heat
- Stir constantly until thickened to prevent the dough from forming lumps
- Transfer the cream to a baking dish and let it cool completely
- Mix the egg yolk into the cold dough
- Work the dough with hands lightly greased with flour
- Roll the dough into long cylinders on a surface lightly dusted with flour
- Cut the cylinders into small pieces, the traditional size for gnocchi
- Cook the pieces in boiling water until they rise to the surface
- Remove the gnocchi from the water and place in a serving dish
- Cover with your sauce of choice
- Finish by sprinkling grated Parmesan cheese over the top
- Place in the oven just long enough to brown and gratinate
Observations
This recipe uses fresh sweet corn to create a light and delicious dough. The secret lies in constant stirring to reach the ideal consistency before shaping the gnocchi and finishing them in the oven.
