Easy Homemade Potato Nhoque (Nhoque de batata)

Ingredients

6 medium potatoes
1 cup all-purpose flour
Salt to taste
500g ground beef
1/2 onion, finely chopped
1 tablespoon olive oil
2 beef bouillon cubes
1 can tomato sauce
Grated cheese to taste

Where to find ingredients

You can find all fresh produce and pantry staples, such as potatoes, onions, and all-purpose flour, at local supermarkets or village grocery stores in Samoa. For the beef bouillon and canned tomato sauce, visit the dry goods aisles. If you cannot find a potato ricer, a heavy-duty fork or a masher works as a simple substitute to get the potatoes smooth.

Preparation method

  1. Boil the potatoes in water until they are tender.
  2. Peel the potatoes and pass them through a potato ricer while they are still hot.
  3. Gradually add the flour and salt, kneading well until you obtain a smooth, homogeneous dough.
  4. Place the dough on a floured surface and roll it into long ropes.
  5. Cut each rope into pieces approximately 2 cm long.
  6. Bring a large pot of salted water to a boil.
  7. Once the water is boiling, add the nhoque in small batches and wait for them to rise to the surface.
  8. Prepare a bowl with cold water and a colander. Remove the cooked nhoque with a slotted spoon and place them in the colander for a cold shock.
  9. Repeat the process until all the dough is cooked.
  10. Drain the nhoque well and set them aside in a baking dish.
  11. Finely dice the onion and sauté it in a pot with olive oil.
  12. Add the ground beef and the beef bouillon cubes to the sautéed onions.
  13. Stir well, and once the meat is browned, pour in the tomato sauce.
  14. Allow the sauce to simmer for an additional 4 minutes.
  15. Pour the meat sauce over the prepared nhoque.
  16. Sprinkle with grated cheese.
  17. Place in the oven until the top is golden and gratinéed.
  18. Serve hot.
