Where to find ingredients
You can find fresh produce like carrots, onions, and bell peppers at local markets (locally known as 'katale') or supermarket produce sections. Rice, raisins, and butter are readily available in any grocery shop or pantry aisle in Kampala. Parmesan can be found in the refrigerated cheese sections of well-stocked supermarkets.
Preparation method
- Place the water, salt, and a splash of oil in a pot and bring to a boil.
- Once the water reaches a boil, add the pre-washed and drained rice.
- Give it a light stir.
- Reduce the heat to low.
- Cook until all the water has been absorbed.
- Turn off the heat.
- Keep the pot covered for a few minutes to finish the steaming process.
- In a separate pan, melt the butter and sauté the raisins.
- Transfer the raisins to a large mixing bowl.
- Add the chopped green onions, carrots, bell peppers, and onions to the bowl.
- Stir in the fresh parsley and grated parmesan cheese.
- Add the cooked rice over the vegetable and raisin mixture in the bowl.
- Gently fold all the components together until everything is well incorporated.
