You can find fresh pumpkin, garlic, and high-quality olive oil at local markets or supermarkets in urban areas like Dar es Salaam or Arusha. If 'abóbora de pescoço' (butternut squash) is unavailable, any firm-fleshed pumpkin variety can be used as a substitute.
Preparation method
- Peel the pumpkin and cut the flesh into 2 cm cubes.
- Finely mince the garlic cloves.
- Heat a large pot or skillet over medium heat with the olive oil.
- Add the garlic and sauté for 1 minute just until fragrant, being careful not to burn it.
- Add the pumpkin cubes and the salt to the pan.
- Stir the ingredients occasionally for 10 minutes, until the pumpkin starts to soften.
- Place the lid on the pan and reduce the heat to the lowest setting.
- Let it cook for 5 minutes so the pumpkin finishes softening in its own steam.
- Remove the lid and continue stirring while mashing the pieces with the back of a wooden spoon until you reach your preferred texture.
- Turn off the heat and serve immediately.
