Ingredients
4 cups cold cooked rice
1/4 cup vegetable oil
2 eggs
Salt, to taste
1/2 cup chopped spring onions
1 tablespoon Worcestershire sauce (optional)
1/2 cup diced cooked ham
1/2 cup cooked or canned peas
1/4 cup vegetable oil
2 eggs
Salt, to taste
1/2 cup chopped spring onions
1 tablespoon Worcestershire sauce (optional)
1/2 cup diced cooked ham
1/2 cup cooked or canned peas
Where to find ingredients
Look for the rice, eggs, oil, spring onions, ham, peas and seasoning in the grains aisle, chilled foods section, eggs shelf, and canned vegetables aisle at supermarkets or local food markets. If needed, use bottled Worcestershire sauce as the substitute for molho inglês.
Preparation method
- Heat 1 tablespoon of oil in a pan
- Crack the eggs into a bowl and beat them well
- Add the beaten eggs to the hot oil and cook, stirring constantly, until they begin to set, but do not overcook them, as they will need more heat in the rice
- Season the cooked eggs with salt and set aside
- In another pan, heat the remaining oil and add the chopped spring onions, stirring for a few moments
- Add the cold cooked rice to the pan, stirring quickly to prevent it from sticking to the bottom
- Add the Worcestershire sauce, if using
- Stir in the diced ham and peas, heating everything through and stirring continuously
- Break the reserved cooked eggs into small pieces
- Add the egg pieces to the rice and mix well, heating until all the ingredients are thoroughly combined and hot
