Ingredients
400 g ground lean beef (patinho)
200 g green beans (about 20 units)
1/2 onion
1 garlic clove
2 tablespoons olive oil
1 tablespoon all-purpose flour
1 teaspoon sweet paprika
1/2 teaspoon cumin
1 cup water
salt and freshly ground black pepper to taste
200 g green beans (about 20 units)
1/2 onion
1 garlic clove
2 tablespoons olive oil
1 tablespoon all-purpose flour
1 teaspoon sweet paprika
1/2 teaspoon cumin
1 cup water
salt and freshly ground black pepper to taste
Where to find ingredients
Find fresh produce and meats at local markets or supermarkets. If Brazilian 'patinho' (a very lean cut) is unavailable, substitute with extra-lean ground beef.
Preparation method
- Remove the meat from the refrigerator shortly before starting so that it reaches room temperature
- Bring the water to a simmer over low heat
- Wash the green beans thoroughly
- Remove the ends and cut them into 1.5 cm pieces, using a diagonal cut
- Dice the onion into 1 cm cubes
- Peel and finely mince the garlic
- Heat a large pot or skillet over medium heat
- Add 1 tablespoon of olive oil and spread the meat in small portions across the pan
- Let the meat brown without stirring for 1 minute
- Season with salt, pepper, and sprinkle the flour over the meat
- Cook for 5 minutes, stirring occasionally so that the pieces separate and brown evenly
- Transfer the browned meat to a bowl and set aside
- Keep the pot on the heat and add the remaining olive oil and the onion
- Add a pinch of salt and sauté the onion for 2 minutes until it becomes soft
- Add the green beans to the pot
- Season with salt and pepper and sauté for 2 minutes until they brown slightly, keeping the texture crunchy
- Add the garlic, paprika, and cumin
- Sauté for another 1 minute until the aromas of the spices are released
- Pour in the hot water gradually while scraping the bottom of the pan with a spatula
- Return the ground beef to the pot
- Cook for another 2 minutes until the sauce has thickened
- Serve immediately
Observations
This dish is an excellent choice for daily meals, perfectly balancing the protein of the beef with the crisp freshness of green beans. Follow the instructions to ensure the meat browns beautifully before incorporating the vegetables.
