Preparation method
- Cook the rice in salted water until very tender
- Drain off any excess water, if there is any
- In a blender, blend the cooked rice with the egg, parsley, coriander, and chopped spring onion until smooth
- Transfer the dough to a pan
- Add the plain flour little by little, mixing as you go
- Place the pan over low heat and cook the dough, stirring constantly, until it comes away completely from the bottom of the pan and forms a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a roll about 2 cm in diameter
- Cut the gnocchi into pieces of about 2 cm
- In a large pan, bring plenty of salted water and about 4 tablespoons of oil to the boil
- Add the gnocchi to the boiling water a little at a time so they do not stick together
- Remove the gnocchi from the water as soon as they rise to the surface, showing they are cooked
- Drain the cooked gnocchi and, if you like, finish by sautéing them in a frying pan with the remaining vegetable oil or serve straight away with your preferred sauce
