Where to find ingredients
Plain flour, fresh yeast, milk, eggs, oil and breadcrumbs can be found in Singapore supermarket baking aisles, chilled sections and neighbourhood provision shops. Fresh yeast may be replaced only if needed by an equivalent yeast, but the original is ideal.
Preparation method
- Put the warm milk, yeast, oil, sugar, salt and eggs in a blender and blend well until the mixture is smooth
- Pour the blender mixture into a large bowl and add the plain flour gradually, kneading until the dough is smooth and elastic
- Divide the dough into two equal portions
- Grease the tins with oil and sprinkle with breadcrumbs, then place one portion of dough in each tin
- Leave the dough to rest in a warm, enclosed spot until it doubles in size
- Microwave one tin at a time for 7 to 9 minutes, adjusting according to your appliance's power
- Turn the bread out onto a plate while it is still warm
Observations
This microwave bread is a handy option when you want fresh bread without turning on a conventional oven. With a straightforward method and basic ingredients, it gives a tasty, fluffy loaf for coffee, breakfast or a quick snack.
