Palm Heart Pie with Shortcrust Pastry (Torta de palmito com massa podre)

Ingredients

300 g cooking margarine or lard
500 g plain flour
Juice of 1/2 lemon
1 egg
Salt to taste
1 jar palm hearts
1 1/2 cups milk
3 tablespoons plain flour
1/2 onion, grated
Nutmeg to taste
Pepper to taste

Where to find ingredients

Look for palm hearts in the canned vegetables aisle at major supermarkets or in Asian grocery stores; the rest are standard baking and dairy staples.

Preparation method

  1. Make the dough by mixing the margarine (or lard), plain flour, lemon juice, egg and salt until you get a coarse crumb.
  2. Chill the dough in the refrigerator for at least 30 minutes before using it.
  3. Prepare the filling: in a saucepan, make a white sauce with the milk and 3 tablespoons of plain flour, first dissolved in a little cold milk so it does not lump.
  4. Add the grated onion and 1/2 jar of palm hearts blended with 1/2 cup of milk.
  5. Cook the white sauce over low heat, stirring constantly, until it thickens slightly.
  6. Season the sauce with salt, nutmeg and pepper to taste.
  7. Add the remaining chopped palm hearts to the sauce and mix well.
  8. Line a baking tin with the dough, pressing it out directly with your hands to cover the base and sides.
  9. Pour the palm heart filling over the dough.
  10. Cover the pie with the remaining dough, shaping it as you like.
  11. Bake in a preheated hot oven for about 40 minutes, or until the pastry is golden and the filling is bubbling.

Observations

This palm heart pie with shortcrust pastry is a classic of Brazilian cooking, ideal for anyone looking for a savoury dish that is both flavourful and comforting. The shortcrust pastry, known for its crumbly, delicate texture, contrasts beautifully with the creamy, well-seasoned palm heart filling. It is a versatile option, perfect as a main dish for a light lunch, as a starter for a special dinner, or even as a more refined snack.

Making the shortcrust pastry takes a little care to achieve the right texture, but the end result is well worth it. The filling is simple to prepare and brings out the mild flavour of the palm hearts. Serve it hot and enjoy this homemade delight.
