Crunchy plantain farofa (Farofa de banana-da-terra)

Ingredients

2 green plantains
2 cups yellow flaked corn flour
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Plantains can be found in wet markets, fruit stalls and larger supermarkets. Flaked corn flour, butter, oil, salt and pepper may be found in supermarkets or speciality/international food shops. If flaked yellow corn flour is unavailable, use a similar coarse cornmeal as a substitute, keeping the original as ideal.

Preparation method

  1. Cut the ends off the plantains and peel them
  2. Cut each plantain in half lengthwise
  3. Cut each half in half again lengthwise
  4. If the strips are too thick, cut them into three parts
  5. Slice each piece of plantain into cubes of about 1 cm
  6. Heat a large non-stick frying pan over medium heat
  7. Add the oil to the frying pan
  8. Place the chopped plantains in the frying pan and season with a pinch of salt
  9. Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelised. The time may vary depending on the ripeness of the plantain; riper plantains brown faster
  10. Lower the heat
  11. Add the cubes of butter to the frying pan and stir until completely melted
  12. Season with 1 teaspoon salt and black pepper to taste
  13. Add the corn flour little by little, stirring constantly with a spatula to incorporate well
  14. Cook for another 4 minutes, stirring all the time, until the farofa is crunchy and well golden
  15. Turn off the heat and serve the farofa immediately
