Traditional Bean Mash (Tutu de feijão)

Ingredients

2 cups cooked beans (with broth)
1 small onion, diced
100 g bacon, diced
3 cloves garlic, finely chopped
1 calabresa sausage link, sliced into rounds
1 cup chopped cheiro-verde (parsley and spring onion)
Raw cassava flour, to taste
Salt, to taste
Black pepper, to taste
Oregano, to taste
Vegetable oil for sautéing

Where to find ingredients

Look for the ingredients in the supermarket dry-goods aisle, the fresh produce section, the butcher counter, and the seasoning shelf. If needed, substitute the calabresa sausage with another smoked sausage available locally, but keep the other ingredients as listed.

Preparation method

  1. In a large frying pan, heat a drizzle of vegetable oil
  2. Fry the diced bacon until it is nicely browned
  3. Add the diced onion and sauté until translucent
  4. Add the chopped garlic and the calabresa sausage rounds, and fry for a few more minutes
  5. Add the cooked beans with a little of their broth
  6. Season with salt, black pepper and oregano to taste
  7. Add the chopped cheiro-verde
  8. A little at a time, add the raw cassava flour, stirring constantly
  9. Keep adding flour until you reach the desired consistency, whether creamier or drier
  10. Serve the tutu de feijão hot, with white rice and pork steaks or another side of your choice
