Okra Stew (Ensopado de quiabo)

Ingredients

200g okra (approx. 20 pods)
1/2 red bell pepper
1/2 red onion
1 garlic clove
1 can diced peeled tomatoes (with juices)
2/3 cup water
1 tablespoon olive oil
1/2 teaspoon cumin seeds
Salt and freshly ground black pepper to taste

Where to find ingredients

You can find fresh produce like okra, red bell peppers, and onions in the produce section of local supermarkets or at island markets. Canned tomatoes, cumin seeds, and pantry staples are available in the dry goods aisles.

Preparation method

  1. Wash the okra pods and dry them thoroughly with a clean kitchen towel.
  2. Trim the ends and slice each okra on the diagonal into 1 cm pieces.
  3. Set the sliced okra aside.
  4. Finely dice the onion and mince the garlic.
  5. Cut the bell pepper in half, remove the seeds, and chop half into 1 cm cubes.
  6. Lightly crush the cumin seeds in a mortar and pestle to release their aroma.
  7. Heat a medium saucepan over medium heat with the olive oil.
  8. Add the onion and bell pepper.
  9. Season with a pinch of salt and sauté for 3 minutes until the vegetables soften.
  10. Add the garlic and crushed cumin.
  11. Stir for 1 minute until fragrant.
  12. Pour in the water and stir well to deglaze the bottom of the pan.
  13. Incorporate the canned tomatoes with their liquid.
  14. Season with 1 teaspoon of salt and black pepper to taste.
  15. Bring the mixture to a simmer over medium heat.
  16. Reduce the heat and cook for 5 minutes, stirring occasionally until the sauce thickens.
  17. Add the sliced okra to the pan.
  18. Cook for another 6 minutes, stirring from time to time, until the okra is slightly tender.
  19. Avoid overcooking so the okra retains its ideal texture.
  20. Serve immediately.

Observations

This stew combines the unique texture of okra with an aromatic, well-seasoned sauce, making it an excellent side dish for everyday meals.
