Lentil and Spinach Soup

Ingredients

1 cup dry lentils
1/2 bunch fresh spinach
1 onion
1/2 carrot (or 1/3 cup, grated)
1 stalk celery (or 1/4 cup, chopped)
2 garlic cloves
1 liter water
Olive oil
1 tsp cumin
1 tsp turmeric
1 bay leaf
Salt and freshly ground black pepper to taste
Crispy bacon crumbs to garnish

Where to find ingredients

You can find fresh produce like spinach, carrots, and celery in the vegetable aisle of local supermarkets or island markets. Dry lentils, spices, and bacon are typically located in the dry goods and chilled meat sections of grocery stores.

Preparation method

  1. Wash the spinach leaves thoroughly in a bowl with cold water for 15 minutes.
  2. Finely dice the onion and mince the garlic.
  3. Grate the carrot using the coarse side of a grater.
  4. Chop the celery stalk into small cubes, discarding the leaves.
  5. Heat a pressure cooker over medium heat with a tablespoon of olive oil.
  6. Sauté the onion with a pinch of salt until golden brown.
  7. Add another tablespoon of oil and sauté the carrot and celery for 2 minutes.
  8. Stir in the garlic and the bay leaf.
  9. Add the cumin and turmeric, sautéing for 1 minute to release their aromatic oils.
  10. Add the lentils to the pot.
  11. Pour in the water gradually, using a spoon to scrape up any browned bits from the bottom of the pot.
  12. Season with salt and pepper.
  13. Seal the pressure cooker and cook over high heat.
  14. Once pressure is reached, reduce the heat and cook for 5 minutes.
  15. Turn off the heat and allow all the pressure to release naturally before removing the lid.
  16. Rinse the spinach once more and stir the leaves into the hot soup.
  17. Simmer uncovered over medium heat for 2 more minutes until the spinach is wilted and tender.
  18. Taste and adjust the seasoning with salt if needed.
  19. Serve with a drizzle of olive oil and a sprinkling of bacon crumbs.

Observations

This balanced meal combines the earthy flavor of lentils with the freshness of spinach, making it an ideal choice for cooler days or as part of a wholesome, nutritious diet.
