Microwave peanut brittle (Pé de moleque)

Ingredients

2 teacups sugar
3 teacups raw peanuts
1 teaspoon bicarbonate of soda
1 teacup corn syrup

Where to find ingredients

Raw peanuts, sugar, bicarbonate of soda and corn syrup can be found in local markets and supermarket baking and dry-goods aisles. Use corn syrup as the original ingredient for the right texture.

Preparation method

  1. Start by mixing the peanuts, sugar and corn syrup in a deep microwave-safe bowl
  2. Microwave the mixture on high power for 10 minutes, remembering to pause the cooking a few times to stir well and make sure it cooks evenly
  3. As soon as you take the bowl out of the appliance, add the bicarbonate of soda and stir quickly so it is fully incorporated into the mixture
  4. Immediately spread the syrup over a stone worktop or cold surface that has been previously greased with a little margarine
  5. Let the sweet rest until completely cool and only then break it into smaller pieces to serve

Observations

This is the practical answer when you feel like a traditional crunchy sweet without spending a long time at the stove. The method is simple, direct and gives a delicious result.
