Ingredients
1 kg salted dried beef
2 large onions
1/3 cup bottled butter
Salt to taste
2 large onions
1/3 cup bottled butter
Salt to taste
Where to find ingredients
Find salted or cured beef at specialist butcher shops, international grocers or stores carrying Brazilian ingredients. Bottled butter is preferred; clarified butter may be used as a substitute if the original ingredient is not available.
Preparation method
- Cut the salted dried beef into pieces of about 7 cm
- Rinse the beef pieces well under running water to remove excess salt
- Place the beef in a bowl and cover with cold water. Refrigerate for at least 12 hours, changing the water at least 3 times during desalting
- After desalting, drain the beef and rinse it again under running water
- Transfer the beef to a pressure cooker and cover with water, making sure not to go past 2/3 of the pot's capacity
- Close the pressure cooker and place it over high heat
- Once the cooker reaches pressure and starts to whistle, lower the heat and cook for 30 minutes
- Turn off the heat and wait for all the pressure to release naturally before opening the lid
- Using a slotted spoon, lift the cooked beef out of the pot and place it on a serving dish
- While the beef is still hot, shred it with two forks. Discard any small pieces of fat or cartilage
- If you prefer, shred the beef in a stand mixer on low speed until it reaches the texture you want
- Peel the onions and cut them into half-moons about 1 cm thick
- Heat a large frying pan over medium heat
- Add the bottled butter to the hot frying pan. Add the sliced onions and season with a pinch of salt
- Sauté the onions for about 5 minutes, until they soften
- Add the shredded salted beef to the pan with the onions
- Stir and sauté for another 5 minutes. Taste and adjust the salt if needed
- Serve immediately
Observations
Carne seca with onions and bottled butter is a traditional Brazilian dish, liked for its pronounced savoury flavour and practical preparation.
It makes a hearty lunch or a small sharing dish, combining shredded beef with the sweetness of sautéed onions and the richness of bottled butter. Desalting the meat is the key stage, giving the dish the right salt level and a tender bite.
