Ingredients
2 full racks of beef ribs
6 cloves of garlic, crushed
Juice of 1/2 lemon
Salt to taste
Beef stock (optional)
6 cloves of garlic, crushed
Juice of 1/2 lemon
Salt to taste
Beef stock (optional)
Where to find ingredients
Beef ribs can be sourced from your local neighbourhood butcher (gosht mandi) or the meat section of high-end supermarkets in major cities. Ask for 'beef ribs' or 'pasliyan'. Garlic, lemons, and salt are readily available in any local grocery store or vegetable market (sabzi mandi). Beef stock can be found in the pantry aisle of larger supermarkets or made at home using beef bones.
Preparation method
- Season the rib racks thoroughly with the crushed garlic, lemon juice, and salt
- Place the seasoned meat into a sturdy roasting tray
- Cover the tray tightly with aluminium foil to trap the heat and moisture
- Place in a preheated oven at a medium temperature (approximately 180°C) and roast for 3 hours
- Remove the aluminium foil from the tray
- Continue roasting to develop a crust, turning the ribs occasionally and basting with the beef stock (if using) or the pan juices until deeply golden
- If the pan juices dry out, add a splash of boiling water to prevent sticking and to help build a delicious pan sauce
Observations
Roasted beef ribs are the ultimate comfort food, ideal for gathering the family together for a hearty weekend lunch. This method uses whole beef rib racks, slow-roasted in the oven until the meat is falling-off-the-bone tender with a beautifully browned, savoury crust. While it takes time, the process is incredibly straightforward, relying on simple pantry staples to let the natural, rich flavour of the beef truly shine.
