Tripe can be found at specialized butcher shops or large supermarkets with a dedicated offal section. White beans, meats, and fresh produce are available at any standard grocery store or local farmers' market.
Preparation
- Cook the white beans in a regular pot until they are tender
- Drain the beans and set them aside
- Cook the tripe in boiling water for approximately 40 minutes
- Drain the tripe and set it aside
- Fry the bacon in a large pot until it turns golden brown
- Add the onion and garlic to the bacon and sauté until lightly browned
- Add the pork ribs and chicken pieces to the pot
- Brown the meats well on all sides
- Pour the chicken stock over the meats

- Add the cooked beans and the tripe to the pot
- Add the chopped potatoes
- Simmer everything together until the potatoes are soft and the broth has thickened
- Finish by sprinkling with chopped fresh parsley
- Serve hot with white rice and toasted cassava flour
