Salt to taste
1 jar palm hearts
1 1/2 cups milk
3 tbsp plain flour

Where to find ingredients
Look for the palm hearts in the tinned vegetables section or the chilled deli aisle; the rest of the ingredients are usually in the baking section, dairy fridge, and spice shelf. If needed, margarine can be replaced with lard as a substitute.
Preparation method
- Make the dough by mixing the margarine (or lard), flour, lime juice, egg and salt until you get a coarse crumb
- Chill the dough in the fridge for at least 30 minutes before using it
- Prepare the filling: in a pan, make a white sauce with the milk and 3 tbsp flour, first dissolved in a little cold milk so it does not lump
- Add the grated onion and 1/2 jar of palm hearts blended with 1/2 cup milk
- Cook the white sauce over low heat, stirring constantly, until it thickens slightly
- Season the sauce with salt, nutmeg and pepper to taste
- Add the remaining chopped palm hearts to the sauce and mix well
- Line a baking tin with the dough, pressing it directly with your hands to cover the base and sides
- Pour the palm heart filling over the dough
- Cover the pie with the remaining dough, shaping it as you like
- Bake in a preheated hot oven for about 40 minutes, or until the pastry is golden and the filling is bubbling
Observations
This palm heart pie with shortcrust pastry is a classic Brazilian savoury bake, ideal when you want something tasty and comforting. The “shortcrust” pastry, known for its crumbly, delicate texture, contrasts beautifully with the creamy, well-seasoned palm heart filling. It is a versatile choice, perfect as a main dish for a light lunch, as a starter at a special dinner, or even as an elegant snack.
Making the shortcrust pastry takes care to get the right texture, but the end result is worth it. The filling is simple to prepare and brings out the mild flavour of the palm hearts. Serve it hot and enjoy this homemade treat.
