Traditional Dried Beef Escondidinho (Escondidinho de carne seca)

Ingredients

1 kg cassava, cooked
1 litre whole milk
1/2 kg creamy requeijão
2 kg dried beef, cooked and shredded
200 g chopped onion
200 g plain butter
Grated Parmesan cheese for topping

Where to find ingredients

Look for the ingredients in the chilled section, dairy aisle, fresh produce section, and meat counter at supermarkets, open markets, or neighbourhood food shops. If needed, ask for dried beef as a substitute for carne seca.

Preparation method

  1. Prepare the cassava mash: in a blender, blend the cooked cassava with the whole milk and creamy requeijão until smooth and creamy
  2. Prepare the filling: in a pan, melt the butter and sauté the chopped onion until translucent
  3. Add the cooked, shredded dried beef to the pan with the onion and sauté for a few minutes to combine the flavours
  4. Assemble the escondidinho: in a baking dish, spread a layer of the cassava mash
  5. Cover the mash with all the dried beef filling, spreading it evenly
  6. Finish with another generous layer of cassava mash over the filling
  7. Sprinkle grated Parmesan cheese over the top layer of mash to gratinate
  8. Bake in a preheated oven at 180°C for about 10 minutes, or until the cheese is golden and forms a gratinated crust
  9. Serve the escondidinho hot and garnish to taste

Observations

Escondidinho de carne seca is a Brazilian favourite, loved for the way it brings together contrasting textures and bold flavour. It works beautifully for a family lunch or a special dinner, combining a soft cassava mash with a savoury filling of sautéed dried beef. The layered assembly and golden gratin finish make it as inviting to serve as it is comforting to eat.

Its straightforward preparation, paired with a polished final result, makes this escondidinho a popular choice for anyone wanting a generous meal with that homely, well-seasoned taste.
