8 large onions, sliced into thick rings
Where to find ingredients
You can find fresh beef cuts, onions, and potatoes at any local Nigerian market or supermarket meat counter. Beef stock cubes (such as Knorr or Maggi) are readily available in the seasoning aisle of any neighborhood shop.
Preparation method
- Line the base of the pressure cooker with half of the onion rings
- Crumble 1 or 2 stock cubes over the onions
- Arrange the meat cubes on top of the onion layer
- Season the meat with the remaining stock cubes
- Cover the meat with the rest of the onion rings
- Seal the pressure cooker and cook over medium heat for approximately 25 minutes once it reaches pressure
- Turn off the heat and allow the pressure to release naturally
- If including potatoes, move the onions aside, add the potato slices, reseal the pot, and cook for another 10 minutes once at pressure
- Wait for the pressure to release naturally before opening the lid
Observations
Pressure cooker beef is a quintessential comfort food, prized for its deep flavor and ease of preparation. By using the pressure cooker, the meat achieves a succulent, fork-tender texture that would otherwise take hours of slow simmering. It is a no-fuss staple for a quick weekday dinner, yielding rich results with very few ingredients. This versatile dish serves beautifully alongside steamed white rice or fresh garden greens.
